Ingredients:
- Tomatoes : 2 (chopped)
- Basmati rice : 1 cup (cooked)
- Onion : 1 (sliced)
- Ginger garlic paste : 1 tsp
- Mustard : 1/2 tsp
- Cumin : 1/2 tsp
- Chilli powder : 3/4 tsp
- Green chillies : 2 (slit into half)
- Turmeric powder : 1/2 tsp
- Oil or ghee : 2 tbsp
- Coriander leaves : Finely chopped
- Curry leaves : Finely chopped
- Cashew nuts : 10
- Take a pan and heat with 2 tbsp of oil or ghee.
- Then add mustard, cumin, cashew nuts and onions. Fry for few mins.
- Then add ginger garlic paste, tomatoes, green chillies and turmeric powder.
- Cook for 10 mins. Then switch off the stove.
- Combine the tomato mixture and rice gently.
- Finally garnish with coriander leaves.
- Serve hot with potato chips or spicy vegetable curry.
